Phad Thai

One of the most popular Thai dishes of all time, the "pad thai" or "phad thai" is made up of flat rice noodles or glass noodles and loads of fresh and crunchy bean sprouts. Shrimp Paste, crushed peanuts and lemon juice impart its unique and tangy flavour.
 
Prep & Cooking Time: 20 mins
Serves 4
Ingredients
   20 small prawns, peeled and deveined
   200g medium thickness, dried rice noodles
   1 tbsp dried shrimp
   3 tbsp vegetable oil
   2 large eggs, lightly beaten
   2 garlic cloves, crushed
   1 small red chilli, finely chopped
   2 tbsp brown sugar
   3 tbsp lemon juice
   2 tbsp fish sauce
   4 tbsp peanuts, toasted and chopped
   3 spring onions, diagonally sliced
   1 cup bean sprouts
   3 tbsp coriander leaves
   lemon wedges to serve
Method



Put the rice noodles in a bowl and cover with boiling water. Put the dried shrimp in a cup and cover with boiling water. Leave both to soak for 10 minutes, then drain. Make sure that all other ingredients are assembled and ready before you start cooking.

Heat oil in a wok over high heat until smoking. Add beaten egg and cook for 30 seconds, then stir to break into small pieces. Add garlic, chill and prawns. Cook for 15 seconds, stirring constantly.

Add sugar, lemon juice and fish sauce. Cook for 15 seconds, stirring and tossing. Tip in the noodles, dried shrimp and 3 tablespoons of peanuts. Toss together in the wok to heat through before adding spring onions and bean sprouts. Cook for further 30 seconds, then tip onto serving platter. Sprinkle coriander and remaining peanuts on top. Serve immediately with lemon wedges.
