Easy Lemon Tart

Chilling Time: 5 hrs
Prep & Cooking Time: 2 hrs
Serves 6
  Vegetarian  Egg
Ingredients
For The Base
   200g nice biscuits, processed to fine crumbs
   90g butter, melted
   1/2 tsp ground cinammon
   1/4 tsp ground nutmeg
   icing sugar to dust
For The Lemon Curd
   4 eggs
   3 lemons
   1 cup caster sugar
   125g butter, chopped
To Make The Base
Lightly grease a 2cm deep and 24cm round flan form. Combine biscuit crumbs,cinnamon,nutmeg and butter in a bowl. Press into base and sides of prepared pan. Refrigerate for 1 hour.
To Make The Lemon Curd
Finely grate rind of 1 lemon. Juice all lemons. Whisk eggs and sugar together in a heatproof bowl until well combined. Add lemon rind and 2/3 cup lemon juice, whisking constantly until well combined. Place bowl over a saucepan of simmering water. Cook, stirring for 20-25 minutes until thick and custard-like. Do not allow to boil. Remove from heat and stir in the butter.

Pour lemon curd into chilled tart case. Cover with plastic wrap and refrigerate overnight. Dust with icing sugar and serve.
