| Ingredients |

1 cup cooked chicken, slivered
|
|
1 litre chicken stock
|
|
1 carrot, diced
|
|
1 stick celery, diced
|
|
1 cup store bought salsa
|
|
400g canned lentils, rinsed
|
|
125g sweet corn kernels, drained
|
|
1/4 cup freshly chopped coriander
|
|
light sour cream to garnish |

| Method | | Bring stock to boil in a large saucepan. Add celery and carrot. Simmer for 5 minutes until soft. Add salsa, lentils and corn. Simmer for another 5 minutes. Add chicken and coriander. Heat through while stirring. |
