| Ahhh yum-cha!! One of my favourite style of food to have. I love any kind of dumplings and bite-sized yum-cha treats. They are easy to make and very healthy. |

| Ingredients |
|
250g lean pork mince
|
|
250 prawn meat, finely chopped
|
|
60g water chestnuts, chopped
|
|
1 tsp cornflour
|
|
1 tsp sugar
|
|
1/4 tsp pepper
|
|
1 tsp freshly minced ginger
|
|
3 tsp soy sauce
|
|
3 green shallots, finely chopped
|
|
36 wonton wrappers
|
|
30ml seasoned soy sauce, to serve
|
|
2 tbsp julienned ginger, to serve |

| Method |
Combine the pork,prawn,ginger,soy sauce, water chestnut, cornflour, green shallots, sugar and pepper in a bowl. Mix well.
Place 1 tbsp of the pork mixture in the centre of 1 wonton wrapper. Wet finger with water and run wet finger along the edge of half the wonton wrapper [semi-circle]. Fold the other dry edge over the wet edge and pinch to seal the edges together. Repeat with remaining pork mixture and wonton wrappers.
Line a bamboo steamer basket with baking paper. Prick paper with a skewer. Add the dumplings, ensuring they don't touch each other. Cover and place over a wok of boiling water. Cook in batches for about 8 minutes until cooked through. |
