Home-made Sweet Chilli Sauce

Sweet Chilli Sauce revolutionised the use of dips and gave good old plain tomato ketchup a run for its money. Versatile and oh so yummy, sweet chilli sauce can be even more satisfying if it is homemade.
 
Preparation Time: 15 mins
Cooking Time: 45 mins
  Vegetarian  From My Recipe Book
Ingredients
   125 small red chillies, deseeded and finely chopped
   4 garlic cloves, finely chopped
   1 tbsp ginger, grated
   1 1/2 cups sugar
   1 1/2 cups white vinegar
Method



Combine all ingredients in a large saucepan and simmer for 45 minutes until the chillies are soft.

Puree cool sauce until smooth. Season to taste. Reheat, pour into sterilised jars and seal.

Gel's Notes
  • While trimming chillies, scrape out the seeds with a teaspoon for a mild sauce. For a hotter version, leave the seeds in.
  • Use stainless steel, enamel or glazed ceramic saucepans which are non porous and won't react with the acid in the sauce.
  • Chillies are hot to handle so use rubber gloves during preparation.
