| A Chinese specialty sauce used in rare delicacies and yum-cha dishes. |

| Ingredients |

6 small red hot chillies
|
|
2 garlic cloves
|
|
1 small onion, coarsely chopped
|
|
4 candlenuts
|
|
1/2 cup peanut oil
|
|
100g raw peanuts, ground
|
|
1/4 cup lemon juice
|
|
1 cup water
|
|
4 tbsp sugar
|
|
1 tsp salt |
|
|
| Method | | Grind together the chillies, garlic, onion and candlenuts. Heat peanut oil in a wok and fry ground ingredients for 5 minutes. Stir in ground peanuts and lemon juice. Add water, sugar and salt. Allow to simmer for 5 minutes or until sauce thickens. |
