Basic Sweet And Sour Sauce

I am biased to sweet and sour dishes. This sauce comes in handy when we are in the mood for some quick Asian supper. This stores well in the fridge for 2-3 days. If you have it handy, you can whip up "Sweet & Sour Tofu" or "Sweet & Sour Chicken" in minutes.
 
Prep & Cooking Time: 40 mins
  From My Recipe Book  Vegetarian
Ingredients
   1 onion, chopped
   1 green capsicum, diced
   1 cup pineapple pieces
   2 tbsp cornflour blended with 1/2 cup vegetable stock
   1 tbsp wine vinegar
   2 tbsp sugar
   1 tsp soy sauce
   1 tsp tomato sauce
   1/3 cup pineapple juice
   1/4 tsp salt
   1/2 tsp sesame oil
Method



Fry onion in a small saucepan with sesame oil, stirring till it softens and becomes transparent. Make sure it doesn't brown. Add green capsicum and pineapple pieces. Stir for a minute. Add all the remaining ingredients and simmer over low heat, stirring constantly till the sauce thickens.

Use it as a base for other delicacies or store in an air-tight container in the refrigerator for upto 3 days.
