Pear And Cinnamon Cake

The sweetness of baked pears is rivalled beautifully by the tartness of the cinnamon. The smell that will permeate your house when you bake this will make your guests want to skip straight ahead to dessert.
 
Preparation Time: 20 mins
Cooking Time: 45 mins
Serves 8
  Egg  From My Recipe Book
Ingredients
   2 firm pears, peeled and cored
   1 1/4 cups plain flour, sifted + extra for dusting
   1 cup caster sugar + 1/4 cup extra
   125g unsalted butter + extra for greasing
   3 eggs
   1 tsp baking powder
   1 tsp salt
   1 tsp cinnamon
   1 tsp vanilla extract
   1/4 cup milk
   grated rind of 1 lemon
   fresh cream to serve
Method



Preheat oven to 180oC. Lightly grease the base of a 23cm springform pan with butter and dust with flour, shaking off excess.

Place butter, sugar, vanilla extract and lemon rind in a bowl and beat with an electric mixer for 3 minutes until pale and fluffy. Beat in eggs one at a time until well combined.

In a separate bowl, combine sifted flour, baking powder and salt. Fold dry ingredients into the egg mixture, add milk and combine gently. Set aside.

Cut pears into 16 slices. Toss them in the extra sugar. Spoon batter into prepared pan, place pears on top and dust with cinnamon. Bake in the oven for 45 minutes. Test if cooked through by inserting a tooth pick in the cake. It should come out clean.

Serve warm with fresh cream.
