| Ginger Chicken Stir-Fry |

| Ingredients |

2 chicken fillets, thinly sliced [500g]
|
|
2 tbsp ginger, minced
|
|
1 garlic clove, finely chopped
|
|
rind of 1 lime, zested
|
|
100g green beans, trimmed
|
|
1/4 lime juice
|
|
2 tbsp brown sugar
|
|
3 tbsp sweet chilli sauce
|
|
1 tbsp chilli oil |

| Method | | Heat oil in a wok on high heat. Add ginger, garlic and lime rind. Cook for a minute, stirring vigorously. Add chicken and cook for 5 minutes until nicely browned. Add lime juice, sugar and chilli sauce. Cook until sauce thickens. Toss through the beans, cook for another minute and serve hot with steamed white rice. |
