Potato Kootu

"Kootu" is a semi-solid side dish from Tamil Nadu in Southern India. A vegetable stew of sorts, kootu is also made with lentils. The absence of sour ingredients like tomato and tamarind is widespread, but this kootu recipe calls for 'tamarind' to impart it a tangy flvour.
 
Preparation Time: 5 mins
Cooking Time: 30 mins
Serves 2
  From My Recipe Book  Vegetarian
Ingredients
   4 large potatoes, peeled and diced
   6 red chillies, deseeded and finely chopped
   1 tsp mustard seeds
   1 tsp fenugreek seeds
   1/4 tsp asafoetida powder
   6-8 curry leaves
   salt to taste
   1/4 cup tamarind extract
   oil for tempering
Method



Toss the diced potato with the salt in a bowl. Set aside. Combine mustard seeds, fenugreek seeds and red chillies in a mortar and grind the spices, mixing them well. Mix with the tamarind extract and keep aside.

Heat oil in a shallow pan. Add curry leaves and asafoetida powder. Add salted potatoes and pan-fry them on medium heat till they turn a warm, golden colour. Add the tamarind extract with the spices and stir well. Continue to cook for 15-20 minutes.

Serving suggestions
  • Garnish with freshly chopped coriander leaves and serve hot with rice and rasam/sambhar.
  • Gel's Notes
  • Tamarind extract can be obtained by pitting tamarinds and soaking them in warm water for an hour. 3-4 small tamarinds in 1/2 cup of water would be a general measure. Remove the tamarinds before using the extract in cooking.
