| "Bhel" is an Indian term most often used to describe a savoury snack with a base of puffed rice, beans or nuts mixed with chopped salad veggies and flavoured with spices and sauces to impart that distinct "chatpata" taste that has millions of fans all around the world. In this unusual "bhel" version, the base is corn kernels and chopped fruits have been added alongwith veggies to make it kid friendly. Try serving in little paper cups at your kid's next birthday party for a nutritious birthday treat. |

1 can corn kernels
|
|
1/2 cup tomatoes, deseeded and chopped
|
|
1/2 cup green capsicum, finely chopped
|
|
1/2 red onion, finely chopped
|
|
1 apple, cored and diced
|
|
6-7 mandarin orange segments, deseeded and roughly chopped
|
|
1/4 freshly chopped coriander leaves
|
|
1 tbsp lemon juice
|
|
1 tbsp sugar
|
|
1 tsp oil
|
|
salt to taste |

| Method |
Heat oil in a skillet over medium heat. Sauté onions briskly till they turn translucent. Add corn kernels and capsicum. Cook for a minute. Toss well and remove from heat. Add the remaining ingredients and serve immediately. |
