| Banana, Date And Pecan Bread |

| Enjoy the guilty pleasures of banana bread without worrying too much with this low-fat version. |

| Ingredients |
|
1 1/2 cups self-raising wholemeal flour
|
|
1 cup brown sugar
|
|
125g low-fat spread
|
|
3 eggs
|
|
1 cup mashed banana
|
|
1/2 cup dessicated coconut
|
|
1/2 cup buttermilk
|
|
1/3 cup chopped pecans
|
|
1/3 cup chopped, dried pitted dates
|
|
1/2 tsp ground cinnamon
|
|
1/2 tsp ground nutmeg |

| Method | | Preheat oven to 180oC. Lightly grease a 10 x 20cm loaf pan. In a large bowl, using an electric mixer, beat the spread and sugar together until creamy. Add the eggs one at a time, mixing well after each addition. In a separate bowl, sift the flour and spices together. Fold into the spread mixture with bananas, coconut, buttermilk, pecans and dates. Pour into prepared pan. Bake for 50-60 minutes or until a skewer inserted in the center comes out clean and dry. Cool in the pan for 5 minutes, then turn onto a wire rack to cool completely. |
