Banana, Date And Pecan Bread

Enjoy the guilty pleasures of banana bread without worrying too much with this low-fat version.
 
Preparation Time: 10 mins
Cooking Time: 60 mins
Serves 8
  Vegetarian  Egg
Ingredients
   1 1/2 cups self-raising wholemeal flour
   1 cup brown sugar
   125g low-fat spread
   3 eggs
   1 cup mashed banana
   1/2 cup dessicated coconut
   1/2 cup buttermilk
   1/3 cup chopped pecans
   1/3 cup chopped, dried pitted dates
   1/2 tsp ground cinnamon
   1/2 tsp ground nutmeg
Method
Preheat oven to 180oC. Lightly grease a 10 x 20cm loaf pan. In a large bowl, using an electric mixer, beat the spread and sugar together until creamy. Add the eggs one at a time, mixing well after each addition. In a separate bowl, sift the flour and spices together. Fold into the spread mixture with bananas, coconut, buttermilk, pecans and dates. Pour into prepared pan. Bake for 50-60 minutes or until a skewer inserted in the center comes out clean and dry. Cool in the pan for 5 minutes, then turn onto a wire rack to cool completely.
Serving suggestions
  • Serve sliced and toasted with jam or butter.
