| This salad screams "tropical" like nothing you have ever tasted. The zing of the chilli, the tang of lime and the mango pieces bursting with flavour make this "no-cook" dish a winner! |

| Ingredients |
| For The Salad |
|
16 fresh cooked king prawns
|
|
1 cup mesclun salad
|
|
2 small avocados, sliced
|
|
juice of 1 lime | | For The Mango Salsa |
|
1 large mango, cut into small cubes
|
|
1/2 red onion, finely chopped
|
|
1 red chilli, seeded and finely chopped
|
|
1 cup freshly chopped coriander leaves
|
|
juice of 1 lime |

| Method |
Shell the prawns, leaving tails intact and devein. Drizzle with lime juice and set aside. Wash and dry salad leaves.
To make the mango salsa, mix the mango cubes, onion, chilli, coriander and lime juice in a bowl.
Arrange salad leaves on plates. Divided the king prawns and avocados equally among the plates. Spoon over the mango salad and season with freshly ground black pepper. Serve immediately |
