Spiced Carrot And Pumpkin Mash

A simple variation to the staple potato mash, the spiced carrot and pumpkin mash has a colour like that of autumn blushing ... stunning!
 
Prep & Cooking Time: 30 mins
  Vegetarian
Ingredients
   500g carrots, peeled and sliced
   600g butternut pumpkin, peeled, deseeded and diced
   50g butter, coarsely chopped
   1/4 cup thickened cream
   1/2 tsp ground nutmeg
   1 1/2 tbsp honey
Method

Cook carrots and pumpkin in a saucepan of boiling, salted water over medium-high heat for 8-10 minutes or until tender. Drain in colander.Return vegetables to the warm saucepan and cook over low heat for approximately 30 seconds until excess moisture evaporates. Remove from heat.

Using a potato masher, roughly mash vegetables. Add butter and mash until just smooth. Add cream and nutmeg. mash until smooth. Season with salt and pepper. Drizzle with honey and serve hot.
