| Spiced Carrot And Pumpkin Mash |

| Ingredients |

500g carrots, peeled and sliced
|
|
600g butternut pumpkin, peeled, deseeded and diced
|
|
50g butter, coarsely chopped
|
|
1/4 cup thickened cream
|
|
1/2 tsp ground nutmeg
|
|
1 1/2 tbsp honey |

| Method |
Cook carrots and pumpkin in a saucepan of boiling, salted water over medium-high heat for 8-10 minutes or until tender. Drain in colander.Return vegetables to the warm saucepan and cook over low heat for approximately 30 seconds until excess moisture evaporates. Remove from heat.
Using a potato masher, roughly mash vegetables. Add butter and mash until just smooth. Add cream and nutmeg. mash until smooth. Season with salt and pepper. Drizzle with honey and serve hot. |
