Thai Fishcakes

An excellent party idea, this finger food is spicy and very very tempting. The golden brown, crisp crust speckled with greens and reds adds to the visual appeal. Serve on a platter of chilled lettuce with a cooling dipping sauce.
 
Preparation Time: 20 mins
Cooking Time: 10 mins
Makes 12 pieces
Ingredients
To Make The Fishcakes
   500g firm, boneless white fish fillets, coarsely chopped
   1 garlic clove, quartered
   3 kaffir lime leaves, finely shredded
   2 tbsp coarsely chopped fresh coriander leaves
   5 green beans, thinly sliced
   3 tsp red curry paste
   1 tbsp fish sauce
   salt to taste
   oil for shallow frying
To Make The Cucumber Dipping Sauce
   1/4 cup sugar
   1/4 cup fresh lime juice
   1 tbsp fish sauce, extra
   1/2 lebanese cucumber, deseeded and finely chopped
   1 small red chilli, deseeded and thinly sliced
   extra kaffir lime leaves to garnish
To Make The Fishcakes

Place the fish and garlic in the bowl of a food processor and process until finely chopped. Add the lime leaves, coriander, fish sauce, red curry paste and salt. Process until just combined.Transfer fish mixture to a bowl. Add beans and mix well. Divide the fish mixture into 12 equal portions. use wet hands to shape portions into patties. Place on a plate and set aside.
Heat oil in a large frying pan on high heat. reduce heat to medium. Add the patties and cook for 2 minutes each side or until light brown and cooked through. Transfer to a plate lined with paper towels to drain of excess oil. repeat with remaining patties, readjusting the heat between batches.


To Make The Cucumber Dipping Sauce

Combine sugar, lime juice and fish sauce in a small saucepan over medium heat. Cook stirring for 5 minutes until the sugar dissolves. remove from heat. Add cucumber and chilli. Stir to combine.
Serving suggestions
  • Arrange fishcakes on a bed of chilled lettuce, garnish with extra kaffir lime leaves and serve with dipping sauce.
