| Ingredients |
|
1 cup self-raising flour
|
|
2 eggs
|
|
60g butter, melted
|
|
1 1/4 cup milk
|
|
1 cup cooked corn kernels
|
|
350g ham, finely sliced
|
|
1/3 cup grated cheddar cheese
|
|
1 tbsp dijon mustard
|
|
2 tbsp chopped green shallots
|
|
sea salt to taste
|
|
freshly ground black pepper |

| Method |
Combine the flour, salt and pepper in a bowl. In a separate bowl, mix together the eggs, butter and milk. Pour the wet mixture into the dry ingredients and whisk until smooth. Add the corn, ham, cheese, mustard and shallots. Mix well.
Heat a frying pan over medium heat and grease lightly. Pour 1/4 cup portions of the mixture into the greased and pan and cook for 2-3 minutes on each side until cooked and golden. Serve the fritters warm. |
