| It will always feel like Christmas when you make this custard. It is rich, creamy and deliciously boozy. |

| Ingredients |
|
3 cups cream
|
|
1/3 cup milk
|
|
6 egg yolks
|
|
1/4 cup caster sugar
|
|
1/4 cup brandy
|
|
2 tbsp cornflour
|
|
1 tsp vanilla extract
|
|
1 vanilla bean, split and scraped, seeds reserved |

| Method |
Combine the egg yolks and sugar in a bowl. In a separate bowl, mix the cornflour and milk to form a smooth paste. Place the cream in a saucepan over medium-low heat. Whisk in the egg, cornflour mixture and brandy. Add the vanilla extract, vanilla bean and seeds. Cook, stirring gently until the custard thickens. Remove the vanilla bean and serve warm with Christmas pudding. |
