Chocolate Fudge Cake Squares

This cake cut into neat squares is not only wicked, it also serves as an elegant after dinner desert for those special guests. Fudgy, molten chocolate in a low-fat dessert is rarely a treat anyone can refuse.
 
Preparation Time: 30 mins
Standing Time: 10 mins
Cooking Time: 1 hr 20 mins
Makes 16 pieces
  Vegetarian  Egg
Ingredients
   150g dark chocolate with 70% cocoa solids, roughly chopped
   3 cups plain flour
   1/2 cup self-raising flour
   2 cups caster sugar
   2/3 cup cocoa powder
   125g butter, coarsely chopped
   2/3 cup pitted prunes
   5 tbsp brandy
   1 whole egg
   2 egg whites, lightly beaten
   icing sugar to decorate
Method
Put a kettle of water on to boil. Pre-heat the oven to 160oC. Grease a 23cm square cake pan and line with nonstick baking paper.




Purée the prunes, adding 1 tablespoon of hot water to achieve a smoother consistency. Scrape the purée into a large mixing bowl. Add the brandy, butter, chocolate, sugar and 1 cup of boiling water. put the rest of the boiling water into a saucepan over low heat so that it is simmering and place the bowl on top, making sure the bottom does not touch the water. Stir the mixture frequently until the chocolate melts and forms a smooth sauce. Take the bowl off the pan and leave to cool for 2-3 minutes.




Sift both flours and cocoa into a large bowl and make a well in the centre. Pour in the chocolate mixture, then add the whole egg and egg whites. Beat to form a smooth batter. Pour the mixture into the prepared pan and smooth the surface. bake for 1 hour 15 minutes, until a skewer inserted in the centre of the cake comes out clean. Leave the cake to stand in the tin on a wire rack for 15 minutes, then turn out and cool on the wire rack completely. Dust the cake with sifted icing sugar and cut into 16 neat squares.
