| Break away from the tradition this Diwali and make this gorgeous firni bursting with the velvety sweetness of custard apples. Garnish with slivered nuts and silver foil [varakh] to make a grand statement. |

| Ingredients |
|
1 litre full cream milk
|
|
4 tbsp rice flour
|
|
5 tbsp sugar
|
|
1 1/2 cups sitaphal [custard apple] pulp
|
|
slivered nuts [pistachios and almonds] for garnish |

| Method | Combine rice flour with 1/2 cup of the cold milk and mix to form a smooth paste. Set aside.
Place the remaining milk with sugar in a deep, heavy bottomed saucepan on medium heat. Add the rice flour and milk paste to the saucepan and mix well. Bring to a boil, stirring constantly. Reduce heat and simmer for 5-10 minutes till the firni thickens. Remove from heat and cool completely. Add the custard apple pulp. Mix well and chill for 4-5 hours.
Garnish with slivered nuts and silver foil before serving. |
