Feta Stuffed Lamb Cutlets

This is a luxurious but easy meal to prepare, perfect for a dinner party or for celebrating that special occasion.
 
Preparation Time: 10 mins
Cooking Time: 20 mins
Chilling Time: 10 mins
Serves 4
  Egg
Ingredients
   1 cup baby spinach leaves, blanched and chopped
   50g feta cheese, crumbled
   8 frenched lamb cutlets
   1/4 cup chopped, chargrilled capsicum
   1/2 cup dried breadcrumbs
   1/2 cup grated parmesan
   1/4 cup blanched almonds, finely chopped
   2 eggs lightly beaten
   1/2 cup plain flour
   2 tbsp oil
Method

Preheat oven to 180oC. Line an oven tray with baking paper. In a small bowl, combine spinach, feta and capsicum. Using a small, sharp knife, make a pocket in the side of each cutlet. Stuff the mixture evenly into each.

In a bowl combine breadcrumbs, parmesan and almonds. Coat cutlets in flour, shaking off excess. Dip into the egg and dust with the breadcrumbs mixture. Arrange in a single layer on prepared tray and chill for 10 minutes. Spray with cooking oil or drizzle lightly with oil and bake for 20 minutes until golden and cooked through.
