Artificial color additives are not permitted in chicken feed. Yolk color depends on the diet of the hen. Feed containing yellow corn or alfalfa produces medium yellow yolks while feed containing wheat or barely produces lighter color yolks. Natural yellow-orange substances such as marigold petals may be added to light colored feeds to enhance the yolk color.

| Ingredients |
|
4 large potatoes, peeled and halved
|
|
2 cups finely shredded green cabbage
|
|
60g butter, chopped
|
|
salt to taste
|
|
freshly ground black pepper |
|
|
| Method |
Cook potatoes in a saucepan of boiling water for 10-15 minutes until tender. Drain in a colander. melt half the butter in the same pan on high. Sauté cabbage for 3-4 minutes on high, till tender. Return potatoes to the pan with remaining butter. mash roughly. Season with salt and pepper. Serve hot. |
