| Ingredients |

16 round rice paper sheets
|
|
50g alfalfa sprouts
|
|
1/2 bunch fresh mint leaves
|
|
1 large avocado, halved, stone removed, peeled and thinly sliced
|
|
1 lebanese cucumber, cut into matchsticks
|
|
2 x 185g cans tuna slices, drained
|
|
3 spring onions, ends trimmed, cut into 5cm lengths and thinly sliced
|
|
1 large carrot, peeled and coarsely grated
|
|
vietnamese dipping sauce to serve |

| Method |
Soak 1 rice paper sheet in a shallow dish of warm water for 30 seconds until it is soft and pliable. Drain on paper towels and transfer to a clean work surface. Place a little of the alfalfa, mint, avocado, cucumber, tuna, spring onions and carrots along the centre of the sheet. Fold in the ends and roll up firmly to enclose the filling. Place on a serving plate.
Repeat with the remaining rice paper sheets and filling. Serve with Vietnamese dipping sauce. |
