| When I was studying in India, way back in the nineties, we used to frequent this
little shack of a restaurant which specialised in Chinese Delicacies .. Indian
Style. We couldn't get enough of their Special Chicken in Chinese Sauce. Here is
that recipe. |

| Ingredients |
| For The Chicken & Marinade
---------------------------
500g boneless chicken breast pieces, cubed
1 large egg, beaten
2 tsp cornflour
1 tsp ginger-garlic paste
salt to taste
oil for frying
For The Special Sauce
----------------------
2 tsp soy sauce
1 tsp honey
1 tsp rice vinegar
1 tsp sesame oil
1 cup chicken stock
1 tbsp ginger, garlic and green chilli paste
2 tsp cornflour mixed into a smooth paste with 2 tbsp water |

| Method |
Combine egg,cornflour,ginger-garlic paste and salt in a bowl. Toss in the
chicken pieces. Cover and set aside for 10 minutes. Heat oil in a large wok
and deep fry the chicken pieces until golden. Set aside.
Heat Sesame oil in a wok. Sauté the ginger, garlic and green chillies paste on high heat for a few seconds. Add soy sauce, honey, and rice vinegar. Stir. chicken stock and cornflour mixture. Add the fried chicken. Season with salt and black pepper. Serve with steamed white rice. |
