| Lentil Burgers With Yoghurt Dressing |

| In the spirit of the Picnic Season, this week I have a great vegetarian recipe for all you Barbecue Lovers. A lot of my friends and acquaintances are going green and when they turn up at barbecue parties, serving them something totally vegetarian from the grill poses a big dilemma for the host. This lentil burger is not only delicious, it is super-healthy and has a lovely texture. It has egg though, and if your guest does not eat egg either, you can always use cornstarch as a binder instead of the egg. |

| Ingredients |
| For The Burger
...........................
400g canned brown lentils, rinsed and drained
1 cup cold mashed potato
1/2 dry breadcrumbs
1 egg
1 tbsp mild curry paste
4 spring onions, thinly sliced
1 tbsp vegetable oil
For The Yoghurt Dressing
.....................................
1/2 cup low-fat plain yoghurt
1/4 cup lemon juice
2 tbsp tahini
To Serve
.....................
4 wholemeal buns
4 slices tomato |

| Method | To Make The Burgers
...........................
Place all the ingredients for the burger in a large bowl. Season with salt and
pepper. Using your hands, bring the mixture together; forming 4 patties. Use
additional breadcrumbs to shape the patties if they are falling apart. Heat oil
in a large frying pan over medium heat. Cook patties on each side for 2-3 mins
until cooked through and golden.
To make The Yoghurt Dressing
....................................
Place all ingredients for the dressing in a small bowl and stir well. Season
with salt and pepper.
Serve Burgers on wholemeal buns topped with tomato slices and yoghurt dressing. |
