Ingredients
2 cups plain flour

1/2 cup dark chocolate chips
1/2 cup coarsely chopped cashew nuts
250g butter softened
1 1/4 cup icing sugar, sifted
1 tsp vanilla extract

Knead the mixture on a well floured surface until smooth. Wrap in plastic wrap and refrigerate for 1 hour. Remove from fridge and divide into 4 equal parts. Roll out each part into a 1cm thick disc. Cut out cookie shapes with a round cookie cutter and place them about 3 cm apart on a cookie sheets lined with non-stick baking paper. Bake for 20-25 minutes in the pre-heated oven.
