| Apricot and Apple Strudel |

| A very light dessert that is fantastic served with ice cream or just on its own with a good dusting of vanillin sugar. |

| Ingredients |
| 415g can apricot halves, drained
2 granny smith apples, peeled, cored, diced
2 tbsp brown sugar
1/4 cup sultanas
2 tbsp toasted pistachios
7 sheets filo pastry
vanillin sugar to dust |

| Method | Preheat oven to 200oC. Line a baking tray with baking paper. pat apricots dry and chop coarsely. Combine apricots with apple, sugar, sultanas and pistachios.
Lightly spray a sheet of filo pastry with cooking oil. Top with a second sheet, spray with oil and repeat with four more sheets. Transfer to prepared tray. Place apricot mixture along one edge of pastry and roll up to enclose. Spray remaining sheet with oil and wrap around roll.
Lightly spray strudel with oil and bake for 30 minutes, until apples are cooked and pastry is golden. Serve dusted with icing or vanillin sugar. |
