| This makes a great after-school meal and is fun to eat. The idea of mince served in lettuce bowls is pretty neat and can be expanded to all sorts of things being served in lettuce cups ... from scrambled tofu to legume stir-fries. |

| Ingredients |
| 1 large iceberg lettuce
300g pork mince
1 carrot, diced
1 celery stalk, diced
3 green onions, finely sliced
1/2 tsp soy sauce
1 tbsp hoisin sauce |

| Method | Select lettuce leaves and trim with scissors if necessary, to make four large cups. Place in a large bowl filled with ice water to crisp.
Spray a wok with cooking oil and heat on high. Stir-fry green onions for 1-2 minutes. Add mince and cook for about 5 minutes. Add hoisin sauce, soy sauce, carrot and celery. Stir-fry for another 2 minutes. Arrange lettuce cups on a platter and spoon in the pork mixture to serve. |
